He is called Leocadio Corbacho and he has an Aladdin´s cave of ham in Ronda. You simply must visit, even if you don´t eat meat. He has a wide variety of cheeses and pickles and everything in between. The shop is also a museum and a cafe - a spectacular place for a Spanish breakfast.

Tasting Olive Oil aka Oleoturismo

 

At 856 metres, the altitude of Cartajima is a little high for the olive to grow well. There are a few but not in commercial quantities. However, in nearby El Burgo you can experience the olive in all its variations and stages of production and, most importantly, tasting!

Please meet Javier, proud owner of the Yerbaguena restaurant on the outskirts of Campillos, an hour´s drive from Cartajima. It came to our attention by a circuitous route and we have been trying to get there for three years now but plans always fell through. It was worth waiting for.

The secrets of Fried Olives

Fried olives revealed! Very easy once you get over the fiddly process of flour, egg, breadcrumbs.

Here´s the set up. Must be canned olives. Fresh won´t work. Drain. Wash and dry a bit on paper.
